The follow up to On Vegetables is as meticulous, beautiful and demanding on the subject matter of meat with a dollop of zero waste. Jeremy Fox is a great chef. Many of the recipes will prove difficult and many will include several steps, but plan ahead and you will find the that recipe that is worth every minute.
